I have been trying out the world of alternate flours. They are usually keto and / or paleo friendly. Today, my pancakes are a coconut flour experiment. I'm using this.
1/4 C Coconut Flour
1/2 tsp Baking Powder
1/4 C Melted Butter or Vegetable Shortening
1/4 C whipping cream or thick coconut milk
1/4 tsp salt
3 (or 4) eggs
Vanilla as you like it. I use at least a tsp, sometimes with additional extracts like almond.
That last image shows how tricky these can be to flip when I don't give it long enough. They take longer than regular flour pancakes because coconut flour is more granular. There was a break in that one as I went to flip it, and it looks like it wants to eat my face. It protested loudly as I covered it in maple syrup and ate it.
